HOW MUCH MEAT IS A HALF PIG?
While the total take-home weight will vary based on if you choose bone-in or boneless cuts, the average cutout from a pig is about 75-80% (if ordering mostly bone-in cuts) or 65-70% (if ordering mostly boneless or processed cuts) of the carcass weight. So, for a pig weighing the average 230, yield can range from 150 to 186lbs, depending on the cuts chosen. A half pig worth of meat will range from 75 to 95 lbs. Please note there will be some loss of water weight on smoked items compared to fresh versions of the same cuts.
HOW MUCH SPACE DO I NEED TO STORE A HALF PIG?
You need 3 to 4 cubic feet for storing a cut and packed half pig - allow more space if there are larger/ odd shaped cuts like bone-in roasts. Whole pigs will need 6 to 8 cubic feet. The meat is professionally cut, cryo-packed and flash frozen, just like the pork cuts available in our farm store. Unopened frozen packages of fresh pork should last a year in your freezer. Smoked products should be used within 6 months. Ground pork and sausage should be consumed within a few days of being thawed and opened. Whole-muscle cuts should be consumed within a week of thawing.

6-8 bone-in loin chops
4 country style rib chops
1 lb of boneless sirloin cutlets
1 pork tenderloin (~0.75 lbs)
1 rack of St. Louis style ribs
2 x 3-4lb bone-in Boston Butt roast
1 x 6-7 lb bone-in split smoked ham
4 x bone-in smoked ham steaks
5-7 lb ground pork or sausage (option to grind other muscle if more is desired)
6-8 lbs no-nitrate smoked sliced belly bacon
1 pork jowl, or 1-2 packs no-nitrate smoked sliced jowl bacon
2 no-nitrate smoked ham hocks
1 pack meaty neck bones for stock / braising
2 packs of fresh split trotters for stock / jelly
2 lbs pork soup bones
2 packs of leaf lard for baking / cooking
2-3 lbs of backfat
heart, liver, kidney, head, ears, tail and tongue
